BBQ Shrimp:
2 pounds medium unpeeled shrimp
3 slices bacon, diced
2 tablespoons onion, chopped
3 sticks butter
1 tbs Zatarain's liquid crab boil
2 tbs chili powder
1 tsp black pepper
1/3 tsp thyme
1/3 tsp basil leaves
2 1/2 tbs dijon or spice brown mustard
1 tsp hot sauce
pinch of salt
cast iron skillet
preheat oven to 325 degrees
Start
with a large cast iron skillet and saute the bacon, then
add chopped onion and cook until the onion is tender. Add
the 3 sticks of butter to the skillet and continue cooking
until the butter is melted. Keep on low to moderate low
heat.
Then
add the remaining ingredients, except the shrimp, and continue
cooking until mixture is back to a simmer. Next add the
shrimp, stir and ladel juices onto and over the shrimp gently
and bring back to a simmer.
Next,
place skillet into your oven, which should be preheated
to 325 degrees. Let the shrimp and mixture cook for approx.
20 to 25 minutes depending on size of shrimp. Remove from
oven and gently stir juices. Serve the bbq shrimp with rice,
garnish with lemon slices and parsley.
