If you like salmon, you will enjoy this smooth, medium textured,
full bodied salmon soup in a stewed tomato and lobster broth
base. It is simple to make, has a nice aroma and is very
delicious. Try it some time.
Salmon Stew:
1 can ( 15 oz ) Salmon
4 tbs Butter
2 jalapenos - finely chopped
1/2 cup chopped onions
1/2 cup chopped bell pepper
1 tsp minced garlic, approx 2 cloves
1/3 tsp black pepper
1/4 tsp liquid crab boil
1/3 tsp Old Bay Seasoning
2 cans ( 14 1/2 oz ) stewed tomatoes ( Italian Style
)
2 cups lobster stock broth
10 drops tabasco hot sauce
2 - 3 tbs cooking sherry
Drain the salmon and reserve the liquid.
Saute
the onions and peppers in butter until tender. Add in the
salmon liquid, lobster broth, stewed tomatoes, garlic, cooking
sherry and all the seasonings. Bring back to a simmer, stir
in the salmon meat, reduce heat to low and simmer covered
for 20 to 25 minutes.
Serve
with rice.
